The macOS builds are not notarised yet. Open the app once with right-click → Open, or allow it from System Settings → Privacy & Security. We are working through Apple's developer programme; this notice will go away once the builds are signed.
Android blocks installs from outside the Play Store until you allow them. When the warning appears, tap Settings, turn on installs from this source for your browser, then reopen the downloaded file. Compare the SHA-256 on the card with the file you downloaded if you want to be certain nothing changed in transit.

Delete the application the way you would any other on your platform. Your vault folder is untouched by uninstalling: your notes are plain files and stay exactly where they are.
